Well I have stayed away from salmon for awhile since the price has been so high the last year or so, we used to eat it weekly, but today the Wild, US, Sockeye was on sale so I had to get it. The salmon was $7.99/lb, but I figure with $1 for frozen peas, $.50 for a couple cloves of garlic and $2 on bulk quinoa my whole salmon meal for 2 is only about $11, most restaurants you would pay $40 for this meal for 2. Not bad...
Most of my cooking is throw together style, but I have been asked to be a little more specific with recipes so I took a picture of this recipe from an old Cooking Light magazine.
I basically used the recipe just for the sauce which is delicious. I use low sodium tamari instead of regular soy sauce since it is gluten-free. I baked the fish with half the sauce and heated the other half on the stove to thicken and pour over the quinoa and peas.
I steamed the peas with garlic and I chose quinoa instead of couscous for the extra fiber, it's gluten-free and I just prefer it.
Try adding in quinoa to your daily meals, it's a whole grain, higher in fiber than rice and pasta, high in protein and gluten-free. Cook like rice, boil 3 cups of water, add 1 1/2 cups quinoa and cook on low until all the water is absorbed: 15-20 min.
