Apple and Celeriac Slaw





 




This is the most delicious and refreshing slaw. I learned this one at the Field to Plate workshop I attended at the end of March. You may have seen celeriac root at the store and not known what it was or how to prepare it just like me!

So the celeriac root is the root of the celery plant and has a very similar flavor. You just peel it with a regular vegetable peeler, grate it and add to grated apples and an olive oil and lemon juice dressing. Refrigerate and enjoy!
